Gluten Free Coconut Chicken

I have a new favorite recipe site. Our Best Bites. Have you checked it out yet? I’d heard of it and wanted to check it out, but didn’t till recently.  Man, have I been missing out!  It has AWESOME recipes!!!  And the writers are stinkin’ cute. They’re normal, busy moms, so the stuff they cook is normal stuff that isn’t complicated (and kids like it). And they explain where you can find ingredients that you maybe haven’t bought before. It’s pretty great. I’ve been getting a lot of recipes from there and they’ve all been hits. 

My latest favorite is the Cripsy Coconut Chicken Fingers.  YUM!  The original recipe calls for 1/2 cup flour and 1 cup panko bread crumbs, which obviously isn’t gluten free.  So I improvised with what I had on hand.  I used 1/2 cup brown rice flour and 1 cup crushed up (GF) tortilla chips.  It worked great! So good!!!  I also left out the cayenne pepper because my daughter doesn’t like spice, but I think it’d be really good with it in. 

I followed the baking directions exactly. 450 degrees for 20 minutes.IMG_3230  

And they turned out perfectly moist.  I tend to overcook my chicken, so this was a nice change.IMG_3231 

I added some buttery/cheesy/garlic broccoli to the side (watch the movie Fat Head on Netflix and you’ll understand why I was craving that) and a salad with lettuce right out of my garden (I’m really excited about that!).

It was a great meal!  My husband dipped his in bbq sauce.  I started dipping mine in honey mustard sauce and that was good, but I liked it best plain.  It was yummy!

SO good! Everyone loved it! I think next time we'll try it with the cayenne pepper! Yum!
