Gluten Free Chicken Taco Soup

My go-to easy recipe used to be Taco Soup (hamburger, tomatoes, beans, corn, taco seasoning), but I think I’ll have to change it to this.  Still easy (and everything is in my pantry/freezer), but with even more flavor. 
Basically you just put these ingredients (plus chicken):image
Into a big pot (or crockpot if you plan ahead) and cook it.

Then add whatever delicious topping you prefer (I love cheese, sour cream, and chips and will try to add it to anything I can).image
Here’s the recipe:
  • 1 can corn
  • 1 can kidney beans
  • 1 can pinto beans
  • 2 cans diced tomatoes
  • 1 can rotel tomatoes with green chilis
  • 1 (4 oz) can of green chilis
  • 1 lb. shredded chicken
  • 1 dry pkg. Hidden Valley Ranch
  • 1 dry pkg. taco seasoning
  • cooked chicken (however much you want)- or you can cook it in the soup if you plan ahead enough.
Mix it all together, heat up, and you’re done!  Add whatever yummy toppings you want.

I don't know if Hidden Valley Ranch is GF- it has modified food starch and I've never seen a container labeled GF. I've been using this recipe to make my own (link below), I think I'm going to start doing the same for my taco seasoning. My rationale is the less processing the company needs to do the less likely the mix will inadvertently become contaminated. But you know how hard it is to find GF spices!

East- it's true that the Ranch mix doesn't specifically say "gluten free" on it, but I think it's safe. Modified food starch usually isn't a problem, especially with companies in North America. Plus, they'd have to list "wheat" if the modified food starch was made from that.

I got this from the Hidden Valley FAQ page:

Most of our products do not contain gluten. Products and ingredients made from grains containing gluten—such as wheat, rye and barley—will be clearly listed in the ingredient statement on the package label.

And:

Only products that have been verified to be gluten free will have a “Gluten Free” statement. However, not all products that are gluten free will have this statement while we are in the process of updating our labels. Please refer to the ingredient statement on package labels or contact us for clarification.

And:

We have a program in place to support the use of the “Gluten Free” statement. Products listed as “Gluten Free” undergo scheduled testing. All suppliers provide assurance that there are no ingredients that contain or are derived from gluten-containing grains. Our products are manufactured in facilities with stringent allergen control programs to prevent cross contamination.

So I believe it's safe gluten-wise. BUT...

It still contains MSG and other undesirable ingredients, so thank you so much for the link to the homemade ranch! I've recently become serious about eliminating MSG and other artificial ingredients from my diet and I've been specifically looking for a good ranch mix. Thank you!
