This recipe has more ingredients than is normal for me, but it's just as easy (if not easier since it's in a crockpot). And it's DELICIOUS!!! Stew meat can be pricey. Stock up when it's on sale and always be sure to check for it in manager specials sections in the meat department. It's worth it. You can also buy steak and cut it into bite sized pieces, but it often isn't as tender.
Easy Beef Stew
Ingredients:
- 1 lb stew meat (bite size pieces)
- 1 bay leave
- 1/2 t. dried thyme
- 1 clove minced garlic
- 3 c. beef stock
- 2 t. Worcestershire sauce (be sure it's gluten free!)
- 1/2 chopped onion
- 2 c. chopped carrots
- 2 lg chopped potatoes
- 1 can green beans
- 2 T. brown sugar
- 3/4 t. salt
- pepper to taste
- Put everything in a crockpot and stir to combine.
- Cook on low 8-9 hrs or high 4-6 (until meat is tender and potatoes are fork tender).
- Stir once or twice as it cooks if possible (I don't because I forget).
- If you'd like to thicken it do so with cornstarch 30 minutes before serving (to do this, ladle some of the stew broth into a separate bowl, mix in cornstarch, pour back into crockpot and cook for 30 more minutes).
