Zucchini “Boats”

This is such a delicious and easy way to use up zucchini.  And the best part about it is you can add any seasonings you feel like.  Here’s a basic recipe to get you started.
First, cut the zucchini lengthwise and scoop out a bunch of the insides, like this:IMG_2407(Don’t scoop it out to the skin.  Leave some zucchini in there.)
Next, mix frozen corn, cheese, and garlic salt/powder together in a bowl.

Then add anything else you want.  I added spinach, pepper, and parmesan cheese.  Other ideas are cooked ground beef, taco seasoning, onions, tomatoes, spices, etc.  Whatever sounds good to you!IMG_2408
Spray the bottom of the zucchini “boats” with cooking spray and fill them up with your corn mixture.IMG_2410
When I make this I like to make extra corn mixture and add it to the zucchini that I scooped out at the beginning.  Then I put it in foil “plates” like this to cook for my kids.

Cook on grill until zucchini is fork tender and cheese is melted.  You could also bake it in the oven.IMG_2422
It’s delicious, versatile, and the perfect way to use up all the zucchini you’ll be getting this summer!
(For those who aren't as familiar with zucchini, eat the whole thing, including the skin.  Be sure it's cooked enough that the skin is soft.)
I love to serve this with seasoned grilled chicken.
