This meal is easy, delicious, and you can hide tons of veggies in it!
Here’s what you do:
Add salsa, corn, beans, whatever, to a skillet. Depending on the salsa I use, I often add garlic too. Amounts are totally up to you. Just make sure there’s plenty of salsa because it’s the base and the chicken needs to simmer in it.
Next add whatever veggies you have on hand. I shredded carrots in and spinach. I think I’ll always add carrots. It add a little bit of sweetness without having to add sugar.
Then add chicken breasts,…
…cover, and simmer till chicken is cooked.
Then shred the chicken and simmer just a bit longer.
Put salsa chicken mixture on a white corn tortilla.
Put shredded cheese in it, pop it in the microwave to melt it, then add sour cream and you’re done! And it’s delicious!
