Gluten Free Tortilla Chip Chicken

This was an experiment of mine and it turned out delicious! I love when that happens!

As with a lot of my experiments, I don't have specific measurements, but I'll give you the basics of the recipe and you can make it to suit your tastes.

Gluten Free Tortilla Chip Chicken

Ingredients:
  • Chicken, cut bite sized
  • GF Tortilla chips, crushed (this is perfect for using up the crumbs at the end of the bag)
  • Egg whites, beaten (for dipping)
  • Butter spray
  • Any seasonings you want: Parmesan cheese, Italian seasoning, Ranch seasoning, etc.
Directions:
  1. Preheat oven to 350 degrees
  2. Combine chips and seasonings
  3. Dip chicken in egg, then coat in chip mixture
  4. Arrange on cookie sheet and spray with butter spray
  5. Bake till done (about 22 minutes)
  6. Enjoy!
The seasonings mixture I usually do consists of garlic salt, basil, Parmesan cheese (the kind in a can), Italian seasoning, and whatever else strikes my fancy at the time. You could make these ranch flavored, or do a Mexican type by adding taco seasoning or cumin. Whatever you're in the mood for. It's so yummy!
