Gluten Free Crock Pot Root Beer BBQ Beef

I got this recipe from an email Betty Crocker sent me. Gotta love Betty Crocker. It got rave reviews from my husband and I loved it as well (both the taste and how simple it was)! There are 3 basic ingredients and you just pop it in your crock pot.

Crock Pot Root Beer BBQ Beef

l forgot to take my own picture, so I got this from the Better Crocker website. Obviously, you won't eat it on a bun unless it's GF.

Ingredients:

  • 1 boneless beef rump roast (4 lb)- I'll admit, I just stick in whatever kind of boneless beef roast I have (which was determined by sales).
  • 2 cups bbq sauce, separated into 1 1/2 cups and 1/2 cup (make sure it's GF!)- I always use Sweet Baby Ray's
  • 1 cup root beer
  • Dash salt and pepper, if desired
  • Whatever you want to eat it with (my husband had his on a sandwich. I ate mine with tortilla chips and it was delicious! It would also taste good on a salad.)
Directions:
  1. Mix 1 1/2 cups bbq sauce and root beer. Pour over roast in crock pot.
  2. Cover, cook on low heat 10-12 hours (I didn't put it in soon enough and it was frozen, so I cooked mine on high about 7 hours).
  3. About 20 minutes before serving, remove beef from crock pot; place on large plate. Pour juices from crock pot into 12-inch skillet. Cook over medium-high heat about 15 minutes, stirring occasionally. Meanwhile, shred beef with 2 forks and return to crock pot.
  4. Stir remaining 1/2 cup bbq sauce into skillet; pour over shredded beef in crock pot. Stir in salt and pepper to taste.
  5. ENJOY!
