Just in time for Thanksgiving- Gluten Free Sweet Potato Souffle

This is one of my favorite Thanksgiving dishes.  It's one of those awesome recipes that tastes like dessert, but people let it pass as a side dish.  Sweet potatoes are packed full of nutrients, so maybe that's why it's allowed :). 

Anyway, I make this all throughout the year and love it!  It freezes well, too (this makes a lot).  Give it a try!

Gluten Free Sweet Potato Souffle
Ingredients:
  • 6 medium sweet potatoes or yams
  • 2 large eggs- beat until foamy
  • 1 tsp vanilla
  • 1/2 c milk
  • 1 tsp cinnamon
  • 1 cup brown sugar
  • 1 stick butter
  • 1 cup chopped pecans
Directions:
  • Peel, cut, boil, and mash sweet potatoes
  • add beaten eggs, vanilla, milk, and cinnamon
  • put in 9x13 pan (you can really do whatever size you want.  I like big so that there's more topping)
  • mix butter, sugar, and pecans and spread on top
  • Bake at 350 degrees for 30 minutes
