Gluten Free BBQ Chicken Salad

Do you remember this easy and yummy recipe?  Hopefully you've tried it over rice already.  Now you've got to try it as a salad. 

Layer it with anything you want.  I love rice, black beans, baby spinach, tomatoes, Crockpot BBQ Chicken, and ranch dressing.

And just in case you're not already convinced that this is a good recipe... you can freeze the bbq chicken.  Cook up a huge batch and freeze some for a busy night.  Yum!
