CLOSEDIn case you haven’t heard, today <a href="http://www.fda.gov/NewsEvents/Newsroom/PressAnnouncements/ucm363474.htm">the FDA announced its decision to standardize gluten free labeling</a>. The FDA’s decision mandates that all products labeled “gluten free” must contain less than 20 parts per million of gluten by August 2, 2014. Awesome, huh?!<br />
<br />
Before now there wasn’t a threshold for how much gluten was allowed to be in a product labeled “gluten free,” so this is great news!<br />
<br />

Today also happens to be the 9th anniversary of the Food Allergen Labeling and Consumer Protection Act (FALCPA), making this day even cooler.<br />

In the bowl of a standing mixer fitted with the paddle attachment, add the flour and sugar mixture. On low speed, add the warm milk. Beat until the dry ingredients are moistened. Raise the speed to medium and beat for about 3 minutes. The dough will be smooth. Transfer to a lightly oiled large bowl and cover with plastic wrap. Let the dough sit at room temperature preferably in a warm, draft-free area for 30 minutes. <u></u><u></u></font> <p><font size="3"><u></u><u></u></font> <p><font size="3">Spray a large sheet of plastic wrap with vegetable spray. Turn the dough out onto the wrap and press gently into a rectangle, about 1 ½ inches thick. Shape, but don’t press too hard. Cover well and refrigerate for 1 to 2 hours. This can also sit overnight.<u></u><u></u></font> <p><font size="3"><u></u><u></u></font> <p><font size="3">Cut the butter into small pieces. Place in the bowl of a standing mixer and add the 3 tablespoons of Glutino Gluten-Free Pantry All-Purpose Flour Mix. Using the paddle attachment, on low speed blend the butter and flour until smooth and blended. Depending on how warm your kitchen is, this can take 30 to 90 seconds. <u></u><u></u></font> <p><font size="3"><u></u><u></u></font> <p><font size="3">Turn onto a sheet of plastic wrap and press into a 9×9-inch square. The butter should still be cool but workable. If it’s too soft, refrigerate for 10 minutes while rolling out the dough. <u></u><u></u></font> <p><font size="3">Take the dough from the refrigerator and roll out to a 12.5 x 12.5 inch square. Place the butter square in the center of the dough. Roll the sides of dough over to meet in the center on top of the butter so that this becomes a 9-x- 12.5 inch rectangle, and roll out just enough to blend the folded edges of the dough into the butter. Wrap in plastic wrap and refrigerate for 30 minutes. <u></u><u></u></font> <p><font size="3"><u></u><u></u></font> <p><font size="3">On a lightly floured surface, place the dough so that the seam is horizontal and roll it out to about 15 x 9 inches. Brush excess flour from the dough’s surface and fold it in thirds, like the shape of a business envelope. Wrap the dough in plastic wrap and set on a tray or baking sheet. Let rest in the refrigerator for 40 minutes. That’s one turn.<u></u><u></u></font> <p><font size="3"><u></u><u></u></font> <p><font size="3">You’ll want to do this twice more. Be sure the dough is well-chilled between turns.<u></u><u></u></font> <p><font size="3">The rectangle might get larger each time you roll it out. That’s okay. Just remember to fold it in thirds each time.<u></u><u></u></font> <p><font size="3"><u></u><u></u></font> <p><font size="3">Once you have completed your last turn, chill the dough again for 30 to 40 minutes.<u></u><u></u></font> <p><font size="3"><u></u><u></u></font> <p><font size="3">Dust a sheet of parchment paper with flour blend. Set the dough on the paper and cover with a second sheet. Roll the dough out to about 2 inches thick (the depth of your donut cutter). Use a donut or biscuit cutter to cut the dough. Or cut out 2 ½ to 3-inch rounds, then cut out the centers. Cover and let rise for 20 minutes. <u></u><u></u></font> <p><font size="3"><u></u><u></u></font> <p><font size="3">Heat 2 inches of grape seed or safflower oil in a fryer or deep frying pan until the oil reaches 350 degrees. Add two G-Fronuts at a time and fry until golden brown. They brown quickly so don’t take your eyes off these. Remove to a paper towel-lined plate. Repeat, frying two at a time, until all the G-Fronuts have been fried. <u></u><u></u></font> <p><font size="3"><u></u><u></u></font> <p><font size="3">Call in all your friends. And then didn’t post it.</font></em></p> <p><em><font color="#dd8484" size="3">Lame, I know. </font></em></p> <p><em><font color="#dd8484" size="3">I just found it and decided that rather than just letting it go, I’m going to post it because it tells about my favorite companies. Ones that I think need to be shared.</font></em></p> <p><em><font color="#dd8484" size="3">So here you go (my current thoughts are in pink)…</font></em></p> <p><font size="3">I went to the Gluten Free Expo today and want to write down my thoughts while they’re still fresh in my mind. </font></p> <p><em><font color="#dd8484" size="3">I was going to write up a little paragraph here, but didn’t… Part of why I never published it.</font></em></p> <p><em><font color="#dd8484" size="3">Let’s continue:</font></em></p> <p><font size="3">What I didn’t like:</font></p> <ul> <li><font size="3">How overwhelming it all felt. I think there were twice as many vendors this year as last. I’m not actually positive this is true, but it seemed like it. This was cool, but it was also a little overwhelming. I was glad I hadn’t brought my 3 and 4 year olds (just my baby, who slept in a Baby Bjorn the whole time). I was also glad I didn’t bring a stroller. It was extremely crowded! Awesome that there was such a big turnout, but the amount of people also made it overwhelming. The flow of (people) traffic was not smooth at all. I’m not sure how this could have been remedied, but if there is a way it will be much nicer next year. </font></li> <li><font size="3">I wish there had been more savory food samples. I think pretty much everyone was sugared-out by the end. It’s understandable that there were so many sweet foods, since baked goods are one of the main things gluten intolerant people miss, but there were definitely too many. </font></li> </ul> <p><font size="3">What I liked:</font></p> <ul> <li><font size="3">They had an area set up to watch the BYU football game. This was perfect because I was feeling a little bad about making my husband miss the game to go to the Expo with me, but it turns out he didn’t have to miss it! There were comfy couches and chairs where my husband hung out after the first hour. He stayed there with the baby and enjoyed the game with a bunch of other fans. I left my purse and bags of goodies with him while I went to the rest of the booths. (They also had the U of U game on in another area.) </font></li> <li><font size="3">The freebies. A lot of booths not only had samples, they also had freebies to take home. I’m especially excited about the healthy bars (fruit and nut, granola, etc.) that I came home with. Those things are expensive and I have a ton to snack on for awhile – yay! There were also a bunch of coupons. We all know gluten free can be expensive, so coupons are definitely nice. </font></li> <li><font size="3">Learning about new (to me) gluten free companies. I t’s always hard to spend money on gluten free products without knowing what they taste like first because some are just plain gross! I loved tasting the products and being able to decide whether or not I’ll purchase them in the future. </font></li> </ul> <p><font size="3">Now I want to mention the food specifically. Unfortunately, I had a few samples that made me never want to buy anything from that company. I hate that because I’m happy when anyone is trying to do gluten free and I want to support them, but some of the products were just too disgusting. I’m not going to mention the names of those companies, but I am going to mention my favorite booths. These were the companies that impressed me most.</font></p> <p><font size="3"><strong>The Stars of the 2012 Gluten Free Expo, According to Bethany</strong> (in alphabetical order):</font></p> <ul> <li><a href="http://www.angieskettlecorn.com/"><font size="3">Angie’s Kettle Corn</font></a><font size="3"> <br /><img title="Angie's Kettle Corn" alt="" src="http://glutenfreeexpo.com/wp-content/uploads/2012/06/package_angies_both-150x150.jpg" width="186" height="163" /> <br />They had white chocolate peppermint popcorn! And not only is it gluten free, but it’s all-natural and is non-GMO certified. It was seriously so yummy! </font></li> <li><a href="http://www.blossomfinefoods.com/"><font size="3">Blossom Fine Foods</font></a><font size="3"> <br /><img title="Blossom Fine Foods" alt="" src="http://glutenfreeexpo.com/wp-content/uploads/2012/06/bff.jpg" width="302" height="59" /> <br />Wow. Now this stuff is expensive to purchase, but sometimes you just need to treat yourself, and you need to treat yourself to treats from Blossom Fine Foods. I tried both the pumpkin cheesecake and marble brownie and both were INCREDIBLE! Really. You need to try them. </font></li> <li><a href="http://www.grandpas-kitchen.com/"><font size="3">Grandpa’s Kitchen</font></a><font size="3"> <br /><img border="0" alt="Grandpa's Kitchen" src="http://glutenfreeexpo.com/wp-content/uploads/2012/06/grandpaskitchen.jpg" width="224" height="175" /> <br />If you’ve read this blog before you know how I feel about Grandpa’s Kitchen flour blend and mixes. Well, their samples certainly lived up to my expectations this year! I tried a cherry cake sample and it was so so good! I’ll see if I can get the recipe and then I’ll share it here. It was seriously yummy! </font></li> <li><a href="http://www.minniebeasleys.com/"><font size="3">Minnie Beasley’s Cookies</font></a><font size="3"> <br /><img border="0" alt="Minnie Beasley's" src="http://glutenfreeexpo.com/wp-content/uploads/2012/09/MinnieBeasleys.jpg" width="150" /> <br />I had never heard of this company till today. These almond lace cookies are AMAZING!!!!!!! Really really amazing. Seriously. They have tons of flavors too. You can order them online. The vendor said you can freeze them too, so you can order a bunch at a time. You have to try these. They’re a fancy, delicious cookie. I wish I could compare them to something, but I can’t. You just need to try them. They seem perfect for Christmas to me. Probably because they’re fancy, yummy cookies. </font></li> <li><a href="http://newgrains.com/"><font size="3">New Grains Bakery</font></a><font size="3"> <br /><img border="0" alt="New Grains GF Bakery" src="http://glutenfreeexpo.com/wp-content/uploads/2012/10/NewGrainsLogo.jpg" width="150" /> <br />I’m familiar with this company because my sister is obsessed with their pink sugar cookies and shares with me when she has one and we’re together. I was reminded of how good those pink sugar cookies are when I sampled one again today. These are very good! I also tried their coconut macaroon and was impressed with that. </font></li> <li><a href="http://sweetcakebakeshop.com/"><font size="3">Sweet Cake Bake Shop</font></a><font size="3"> <br /><img title="Maceys" alt="" src="http://glutenfreeexpo.com/wp-content/uploads/2012/06/NqFe.png" width="221" height="93" /> <br />I’ve always been a fan of Sweet Cake Bake Shop. Their first bakery was (and still is) in Kaysville and I love having a yummy cupcake from there. Everything they make is gluten free, so you don’t have to worry about cross-contamination with non-gf-flour. Everything I’ve had from Sweet Cakes has been delicious. Their samples didn’t disappoint today either. I should have counted how many cookie and bar samples they had. Basically, they handed you a plate and told you to pile it up. Man, there was some good stuff there! Luckily, I had brought a couple of plastic bags in my purse just for situations like this. There was way too much sugar for me to eat it all there, but I’ve been enjoying it since being home and will continue to enjoy the plate of cookies and bars for the next few days (if I can keep it away from my kids, that is). Tasty stuff! </font></li> </ul> <p><font size="3">That concludes my list of the stars. If the majority of your family can eat gluten, it can be especially tricky when it comes to those traditions. If your family has traditions that involve gluten-filled foods you can’t eat, it’s important for you to figure out a gluten-free alternative, so you don’t feel left out. </font></p> <p><font size="3">These days, many gluten-filled products have a gluten-free alternative that you can just buy. And for those that don’t, you can either make your own or make something else just as good (or better).<strong> Stay positive</strong> about it. Remember the delicious <strong>foods you CAN have</strong> and be grateful for those. More importantly, focus on <strong>how great you feel</strong> when you don’t eat gluten. There are so many people who constantly feel awful and don’t know why. You do. Be happy about that. <strong>Choose</strong> to dwell on the positive in your life instead of dwelling on what you can’t have (easier said than done sometimes, I know, but the more you do it, the better you’ll get at it).  </font></p> <p><font size="3">One of my family’s traditions is having “monkey bread” (although we called it butterscotch pull-a-parts until in-laws came in and called it monkey bread) for breakfast every six months before we watch <a href="http://www.lds.org/general-conference?lang=eng" target="_blank">LDS General Conference</a> on Sunday morning. That stuff is good! But it’s definitely not gluten-free. </font></p> <p><font size="3">Luckily for me, I have an amazing mom who is great at creating wonderful gluten-free alternatives for me and my sister. </font></p> <p><font size="3">She’s used the <a href="http://www.glutino.com/products/baking-mixes/muffin-scone-mix-us/" target="_blank">Glutino muffin mix</a> for the past few years (actually, it was just the <a href="http://glutenfreeinutah.blogspot.com/2013/05/a-gluten-free-company-that-knows-what.html" target="_blank">Gluten Free Pantry</a> when she first started using it for this, but now it’s officially Glutino on the box) and it’s always been yummy, but she perfected it this last time.<a href="http://www.glutino.com/products/baking-mixes/muffin-scone-mix-us/" target="_blank"><img style="float: none; margin-left: auto; display: block; margin-right: auto" alt="muffins_us" src="http://www.glutino.com/wp-content/uploads/2010/08/muffins_us-250x250.png" width="300" height="300" /></a></font></p> <p><font size="3">Unfortunately, she makes it up as she goes, so when I asked her for the recipe she wasn’t completely sure what she did. I made these ones with canned peaches and they were good, but I will most definitely be making these with the fresh Perry peaches. YUM! Well, if you’re new to doing gluten free, let me tell you… you’ve got it easy. Back when I started living gluten free 6 1/2 years ago there were way more “misses” than “hits.” Every time I purchased a new gluten-free product it felt like I was throwing my money down the drain. </font></p> <p><font size="3">Luckily, <a href="http://glutenfreeinutah.blogspot.com/2011/10/gluten-free-blog-you-must-check-out.html" target="_blank">my friend</a> who’d been gluten free most of her life was there to help me. </font><font size="3">She gave me <a href="http://glutenfreeinutah.blogspot.com/2009/08/gluten-free-corn-dogs.html" target="_blank">recipes</a> and told me which products were the best.</font></p> <p><font size="3">She told me there was one brand I could always buy without worrying I was wasting my money. That brand was <a href="http://www.glutino.com/" target="_blank">Glutino</a>. How about three bits of awesome news?</font></p> <p><font size="3">Of course you would.</font></p> <ol> <li><font size="3">Glutino acquired Gluten Free Pantry back in 2004, (I didn’t realize this until a month ago. I just knew that every Gluten Free Pantry mix I’d tried was excellent), and then in 2011 Boulder Brands (formerly Smart Balance) bought Glutino, and they recently bought Udi’s as well! I love <a href="http://udisglutenfree.com/" target="_blank">Udi’s</a>! That is another company that I completely trust. </font><font size="3">The point of this is to say, be on the lookout for a lot of awesomeness coming from the Boulder Brands company. They know what they’re doing, and based on the companies they’ve been acquiring, they know what’s good when it comes to gluten free.</font>  </li> <li><font size="3">Something else great about Glutino and Udi’s products are they’re made from natural and non-GMO ingredients (they’re working with the Non-GMO Project to get verification on their products… some are already done). I believe a huge mistake many people make is they think that if a product is a special gluten-free item, it must be healthy. That’s definitely not true! You need to be selective with the gluten free products you consume, especially if your digestive system has been damaged from gluten in the past. I love that I can trust Glutino and Udi’s to taste good AND be made with quality ingredients!</font> </li> <li><font size="3">The last bit of news is on a much smaller level, but it’s just as exciting. I have been gluten free for 6 1/2 years now and up until two weeks ago I’d only had quinoa once. And that was because someone else made it. Yeah, I know. Hopefully I haven’t lost my credibility as a gluten free blogger. </font></p> <p><font size="3">And now I have another confession. I actually did make something with quinoa about 3 months ago… only I didn’t realize it till I made quinoa 2 weeks ago. The mystery of the disgusting granola was solved!</font></p> <p><font size="3">Three months ago I’d made some homemade granola with gluten free oats. It usually turns out amazing, but this batch was just gross and I couldn’t figure out why. I did what I always do: add oats, coconut oil, honey, and then whatever other seeds and nuts I can find. Everything was in plastic bags from the Winco bulk section and I just thought the quinoa was some kind of seed (flax, sesame, whatever. I didn’t know). Yeah… uncooked quinoa in granola is not good. Now you know.</font></p> <p><font size="3">So, now that you know how NOT to use quinoa, let me share some helpful info on it.</font></p> <p><font size="3">When I decided I wanted to start incorporating quinoa into my meal plan I turned to the best source ever: my facebook friends. They were very helpful! Here are some things to know:</font></p> <ul> <li><font size="3">Quinoa has a slightly “nutty” flavor (though my husband doesn’t agree with this). </font></li> <li><font size="3">It will take on the flavor of whatever you cook it in (chicken broth, cinnamon, etc.) </font></li> <li><font size="3">You cook it the same way you cook rice. For me, that means I use a rice cooker. I don’t like to bother with cooking rice or quinoa on the stove. I like putting the grain in, adding the liquid, pushing a button and not having to think about it till it’s ready to serve at dinner. Awesome. </font></li> <li><font size="3">Quinoa is super healthy. Since us gluten intolerant people can’t have whole wheat, we need to get our whole grains another way and quinoa is a great option (though, be sure to include a lot of other grains, too). </font></li> <li><font size="3">Quinoa is extremely versatile. The first time I cooked it in chicken broth. It added a very subtle flavor to it. The veggies were just okay. Both the chicken and veggies are delicious in that.</font></p> <p><font size="3">Once the kabob chicken and veggies were gone, I still had leftover quinoa. It was good. </font></p> <p><font size="3">The other way I cooked quinoa was with some cinnamon and vanilla in the water. Love! It was so good! I had this for breakfast three mornings in a row. On the fourth morning I had it with blueberries, too. It’s yummy stuff. I just keep the leftover quinoa in the fridge, then heat it up before adding the extra ingredients. </font></p> <p><font size="3">There are so many options with this! I’m not doing much sugar right now, so the raisins are a must. I’m thinking once peach days in Brigham City, Utah start I’m going to have to have this breakfast with peaches and cream. Mmmmm…. <br /> <br />I like the crunch the apples give this. And coconut is just always good. You can really add whatever you’re in the mood for that day. I’ll admit, it’s been awhile since I’ve had pretzels, so I can’t promise they’re exactly like the “real” thing, but I can tell you they’re good. And my kids (who <em>can </em>have gluten-filled pretzels) love them. I can also tell you that I’ve had some gross gluten free pretzels. These taste nothing like those ones. </p> <p align="left">I’m actually quite in love with the yogurt covered pretzels. They’re AMAZING!!! And addicting. I’d go to the cupboard thinking I’d eat just 3… well, you can probably guess the rest of that. Pretty much, I had planned to share them with my sister, but that’s not going to happen until a trip to the store is made. I’m guessing the chocolate ones are the same way. The plain ones taste like pretzels. They’re quesadillas. Quesadillas packed with healthy goodness. <br />

It mostly came about because I had a bunch of random veggies in the fridge that needed to be used up and I was wanting to use my food processor. My husband gave it to me for my birthday at the end of February. I love it! I love finding meals that use it a lot and this is one of them. This one can be done without a food processor, but it’s really fun and fast if you have one.<br />

I don’t even know what exatly to call these. They’re quesadillas, but kind of different ones. Vegetarian quesadillas, but meat could easily be added. Basically, I’m sharing it to show a different way to make quesadillas and to make them healthier and packed with veggies.<br />
<br />
This would even be good as a lettuce wrap. Then you wouldn’t need to buy special gluten free tortillas. I think I’ll have to try that soon.<br />

I didn’t take pictures of the whole process because it was an experiment and I didn’t know it would turn out so well.<br />
<br />
Here’s what I did (in the order that I did it with the food processor):<br />
<ul>
<li>I grated some cheddar cheese. Probably 1 1/2 cups. I’m actually not supposed to be eating much dairy, so I think I’ll cut back on this next time, even though the 1 1/2 cups wasn’t a lot for quesadillas in the first place. </li>
<li>I dumped the cheese into a mixing bowl and shredded some carrots. All I had were baby carrots, which don’t work as well in a food processor, but oh well. It worked. I grated those and dumped them into a pan on the stove that already had olive oil in it. </li>
<li>Then I chopped (in the food processor, of course <img alt="Winking smile" class="wlEmoticon wlEmoticon-winkingsmile" src="http://lh3.ggpht.com/-FCLRf-Fe81U/UWzZiOFSNOI/AAAAAAAAGPU/4MEl6D0CvQE/wlEmoticon-winkingsmile%25255B2%25255D.png?imgmax=800" style="border-bottom-style: none; border-left-style: none; border-right-style: none; border-top-style: none;" />) red, orange, and yellow sweet mini peppers. Just a few. They were from a bag of the mixed sweet mini peppers. Love these things. I tend to always have them in the fridge now. I chopped them pretty small, so I could hide them from my kids and then dumped them into the pan. </li>
<li>Then I remembered I wanted garlic, so I put 3 fresh cloves in the food processor and chopped them. Next time I’ll chop them with the peppers. I added the garlic to the pan and sautéed the veggies that were in it (carrots, peppers, garlic). </li>
<li>While that was sautéing I put lots of spinach in the food processor and chopped that small. Lots and Lots. More of that than the carrots and peppers combined. Put however much you want in, though. I added the spinach to the sautéing pan. </li>
<li>I added some seasonings that sounded good. Minced onion (I would’ve added fresh if I’d had some), salt, chili powder, and lots of cumin. Love cumin. </li>
<li>I sautéed it all for awhile and then added a can of corn (drained), a can of black beans (drained), and a chopped tomato (2 would’ve been better, but I only had 1). </li>
<li>I let it cool a bit then added the mixture to the grated cheese in the mixing bowl. Then I thought adding feta would be yummy. So I did. If you’ve never made a quesadilla before, don’t worry… it’s easy. Put something on your pan first to make it not stick. I prefer butter. Then put one tortilla down, add some of your mixture to it, add any toppings particular to that quesadilla (i.e. cilantro and mushrooms on mine, only mushrooms on my husband’s), then put the 2nd tortilla on the top. Brown it, then flip it over and do the other side. Have the temperature low enough that the insides get nice and warm and the cheese melts without the tortilla burning.<br />
<br />
Stick it on a plate and cut it into triangles with a pizza cutter. You can also dip it into anything you want. I used some of the hot sauce from <a href="http://glutenfreeinutah.blogspot.com/2011/05/gluten-free-best-tacos-ever.html">Fuzzy’s Tacos</a>. My husband had ranch and bbq sauce.<br />
Because of how little cheese I used for such a large amount of the mixture, these didn’t stick together quite like regular quesadillas. By the end we were using forks. Especially for my gluten free ones. But they were SERIOUSLY GOOD!!!!! My kids downed them as well. Though if they’re not veggie fans and they’ve never had quesadillas before, you might want to start with something simpler to get them used to the idea (my kids weren’t a fan until we had them at a friends house. Then they were willing to have some with beans and cheese, then beans, cheese, corn, and chopped spinach. You can take this idea and make any kind of quesadilla you want. Add anything. Zucchini would be perfect to add. And you can have way less in it than what I put in. I’m just trying to find new ways to pack in the different veggies and this one ended up being perfect.<br />

It’s so good and the recipe is really versatile. If you’ve been a long-time reader, you know I rarely deal with lots of crazy gluten free flours. I prefer to have one big bag of </font><a href="http://www.grandpas-kitchen.com/"><font size="2">Grandpa’s Kitchen Gluten Free Flour mix</font></a><font size="2"> (which already has the xantham gum mixed in) and some tapioca flour. I can basically make everything I care to make with those two things (I don’t do a ton of specialty gluten free treats. It costs more and it’s healthier to just stay away from all of the carbs and sugar anyway). </font></p> <p align="left"><font size="2">When I make something with the gluten free flour mix, I hoard it all for myself. Even though the mix I use is a good price as far as gluten free flours go, it’s still pricey enough that I don’t love to share it with people who don’t need gluten free. On the other hand, tapioca flour can be purchased in bulk and isn’t a bad price at all. Because of that, I gladly share the Brazilian cheese bread when I make it. </font></p> <p align="left"><font size="2">I love adding new spices to the cheese bread each time I make it. I’ll add extra garlic, try different cheese, put parsley in, and once made pizza ones with spinach, pizza seasonings and cut up pepperoni (we dipped them in pizza sauce). </font></p> <p align="left"><font size="2">Back at the beginning of September, when I was 8+ months pregnant with my cute little Emma, I craved carbs and sweets big time! I especially wanted a cinnamon roll. Problem was, I had run out of my GF flour and didn’t want to run to the store for more. I was making some of the cheese bread for dinner that night (great as a side for </font><a href="http://glutenfreeinutah.blogspot.com/2012/11/gluten-free-creamy-cheesy-broccoli.html"><font size="2">cheesy brocolli cauliflower soup</font></a><font size="2">) and I had an idea. I'm trying to lay off the sugar for my health. Actually, a year ago I wasn't eating any sugar at all. I went through the Christmas holidays and new years without having any and was doing great... until I got pregnant.<br />

Nothing sounded good except sweet treats and I started eating sugar again. It made me feel awful eating it, so I started looking into alternative natural sweeteners.<br />

That's when I found Truvia®. I add a packet of Truvia® to my gluten free cereal every morning and it's the perfect amount of sweetness for me. Before I started doing this I would use a lot of sugar in the same bowl of cereal to make it sweet enough for me... and then I'd feel awful within an hour of eating. So glad I found Truvia®!<br />

I'm still trying to get off all other sugar (I'm liking yummy baked treats right now... I'm always hungry from breastfeeding!), but until then I'm glad I found out about Truvia® Baking Blend. It contains Truvia® natural sweetener and sugar and it works the same as regular sugar in recipes, except you need half the amount and it contains 75% fewer calories than sugar (with twice the sweetness). So it might not be entirely no sugar, but it's much less, which is what I need.<br />

I decided to try out the carrot cake with cream cheese frosting recipe that Truvia® provides on their website. I've never made one before and I had all the ingredients (besides walnuts, which I left out), so I went for it. Besides grating 3 cups of carrots by hand (I need a food processor) it was really easy. And it turned out delicious! It's moist, sweet, and the texture is great! The cream cheese frosting on top is yummy too.<br />

I actually put 1 TBS, not just a tsp. When I was younger I’d add more of it to more bowl for more kick. I've got to tell you about the food they had at <a href="https://intermountainhealthcare.org/hospitals/mckaydee/pages/home.aspx" target="_blank">the hospital </a>where I had her. There was a menu that I could order from anytime of day and there were tons of gluten free options! I had grilled ham and cheese sandwiches, tortilla wraps, cupcakes, cinnamon rolls, and french toast. All gluten free and delicious! It was seriously heaven. In fact, we were anxious to go home, but we stayed a few extra hours because I wanted to have my lunch there so I could get some more yummy treats.<br />

The tortilla wrap was especially yummy and made me want to get some gluten free tortillas so I could make it on my own. I'm trying to remember exactly what was in it. I think it was a California something or other wrap. It had chicken, bacon, avocado, lettuce, and other stuff. Yeah, I really don't remember, I guess (I did just give birth ;) ). Basically, make sure you have the bacon, avocado and chicken and then add whatever else sounds good to you.<br />

I think May-Aug and then Nov-Feb are the busiest around here. It’s just hard to find the time, energy, and motivation to post sometimes.</p> <p>But… I have had this post in mind for months now and need to post it before we’re completely out of camping/campfire season (granted, here in Utah you can’t have open fires at have the campgrounds anyway this year. So sad). </p> <p>I’ve heard of a lot of people struggling to figure out what gluten free food they can do for camping. I actually think camping food is some of the easiest to do gluten free. Just take a look at <a href="http://www.sixsistersstuff.com/2012/06/25-delicious-camping-recipes.html">this list made by Six Sisters Stuff</a>. It’s not a gluten free list, yet a lot of them are naturally gluten free. And the ones that aren’t can easily be made gluten free with a few specialty ingredients. </p> <p><img style="display: block; float: none; margin-left: auto; margin-right: auto" title="IMG_2179" border="0" alt="IMG_2179" src="http://lh4.ggpht.com/-wo3o14VvL0M/TliGnPIXysI/AAAAAAAADY8/Wdrg-yjC3OY/IMG_2179_thumb%25255B1%25255D.jpg?imgmax=800" width="353" height="276" /><a href="http://glutenfreeinutah.blogspot.com/2011/08/gluten-free-tin-foil-dinner-aka-hobo.html">Tin foil dinners</a> are a favorite of mine. Just heat the chili and layer all of the toppings. </p> <p align="left">You can also buy specialty gluten free items like gluten free sandwich bread and hotdog buns, or you can do what I do: eat lettuce wraps and hotdogs without a bun. Cheaper and still really good (plus, if you’re concerned with calories, not eating any bread saves you a ton!). Stews and soups are also great ideas. It’s even easier if you cook them beforehand and just reheat over the fire. </p> <p align="left">Seriously. There are so many options for gluten free lunches and dinners while camping. (If you’re interested in more, let me know.) I think the harder thing to figure out is desserts. When you think of camping desserts what comes to mind? </p> <p align="left">For me, it’s s’mores and dutch oven cobblers/cakes. Well, guess what? Those are super easy to turn gluten free too! Here’s how:</p> <p align="left"><strong><font size="4">Gluten Free S’mores</font></strong><img style="display: block; float: none; margin-left: auto; margin-right: auto" alt="Product Details" src="http://ecx.images-amazon.com/images/I/41vVLG6GYwL._AA160_.jpg" width="202" height="202" />They <em>do</em> sell gluten free graham crackers, so you can just go that way if you want (I have tried <a href="http://www.amazon.com/Kinnikinnick-Smoreables-Graham-Style-Crackers/dp/B004T3AWRA/ref=sr_1_2?s=grocery&ie=UTF8&qid=1344884963&sr=1-2&keywords=gluten+free+graham+crackers">these Kinnikinnick ones</a> and they were pretty good), but there are other options too. You can, of course, make some gluten free chocolate chip cookies (or another kind) and use those, but again… I’m cheap. And somewhat lazy. So I prefer not to bother with things like that. Instead I like to create my own <strong>gourmet s’mores</strong> without any grain products at all.</p> <p align="center">I have more pictures of these things, but can not find them anywhere on my computer. Darn! It’s as easy as that!</p> <p align="left">How can you be sad when you’ve got a delicious dessert like that to eat?</p> <p align="left">Another favorite of mine is a piece of plain milk chocolate, a roasted marshmallow, and a few strawberry slices. YUM! I actually add strawberries to most of my “gluten free gourmet s’mores.” They make them a little less rich… and then I can eat more <img style="border-bottom-style: none; border-left-style: none; border-top-style: none; border-right-style: none" class="wlEmoticon wlEmoticon-smile" alt="Smile" src="http://lh5.ggpht.com/-pC73F3zH6jU/UClhLCH_6XI/AAAAAAAAFkM/al5Slt_2CHI/wlEmoticon-smile%25255B2%25255D.png?imgmax=800" />. </p> <p align="left">So, basically what you do for gluten free gourmet s’mores is you buy a bunch of your favorite candy bars, marshmallows (you can even buy different flavors of these… most marshmallows are gluten free, but be sure to check), some fruit, maybe some caramels or caramel syrup, and anything else that sounds good to you. Then you can sandwich your marshmallows in between candy bars, or go ahead and set it on top. They’re messy and delicious! Just like regular s’mores (though even tastier, in my opinion). Plus, all of your non-gluten free camping buddies will love the extra gourmet options they’ll have for their s’mores. Seriously, try it. (I’m just now realizing that I haven’t tried any sort of Butterfinger s’more yet… I need to get on that.)</p> <p align="left"> </p> <p align="left">Now that s’mores are taken care of, let’s move onto dutch oven cobbler…</p> <p align="left"><strong><font size="4">Easy Gluten Free Dutch Oven Cobbler</font></strong></p> <p>My sister makes the gluten-filled version of this a lot and when I visited her in May she figured out how to make it gluten free. And apparently, there’s a trick to how many coals you put on it depending on what temperature you need to cook it at. I don’t know what that is, but I do count 16 coals on top of the dutch oven… so put 16 coals on it. Unless you know better than me when it comes to dutch oven cooking. With the Utah weather finally warming up and <i>staying</i> warm I've been paying a lot more attention to my yard. I've been weeding like crazy and trying to figure out some nice landscaping options that I can do (and maintain) on a budget.<br />

Fruits and Veggies are such a huge part of the gluten free diet and it's wonderful to be able to grow your own! Not only do you know where your food has come from, but there's a sense of satisfaction that comes from eating food that you grew.<br />
